There are different types of chocolates. They are Dark Chocolate, Milk Chocolate, and White Chocolate.

Dark Chocolate contains cocoa liquid, cocoa butter, vanilla, and sugar. It is thicker and richer than milk or white chocolate. It is used for cooking and baking.

White chocolate contains only cocoa butter blended with sugar, vanilla, and milk solids. It is rich, creamy.

Milk Chocolate contains the same ingredient as dark chocolate, but with added milk solids. It is less dense than dark chocolate, creamy, sweeter and softer in texture.

Dark, milk and white chocolate can be used for cooking. Dark chocolate has bitter, sweet and semi-sweet variety. Bitter chocolate has 80% cocoa and butter with very less amount of sugar. Sweet chocolate contains a high amount of vanilla and sugar.

Melting Chocolate:

Chocolate can be melted in many different ways, melted using the stove, microwave or the oven.

Stove Top – place chocolate in a hygienic, dry, heatproof vessel over a pan of boiling water. Ensure no water or droplets enters the chocolate vessel. Stir continuously over low heat until the chocolate turns out to be molten.

Microwave – place the chocolate in a fresh, dry, microwave-safe vessel. Leave it to heat for about 1 minute on a medium/high heat then stir well. Leave it another 30 seconds, then stir it again, continue the same until chocolate melts completely.

Oven – heat oven to 160 C. Place chocolate in a sparkling, dry, heatproof basin. Turn off the oven and place the vessel in the oven for about 10 minutes. Take it out and stir well, then place it back in the oven if essential for some time, then remove it and stir again.

Tips for Melting Chocolate:

* Before melting, break the chocolate into even size pieces.

* Use a metal spoon to stir chocolate; plastic and wooden spoons maintain wetness that can make the chocolate to seize.

* Each time use a metal, glass or ceramic vessel to liquefy chocolate.
